									<ul><li>6 large eggs</li><li>2 tbsp olive oil</li><li>2 c chopped vegetables of your choice</li><li>¼ tsp salt</li><li>½ tsp black pepper</li><li>2 garlic cloves, mince</li></ul><p><em>Optional:</em></p><ul><li>½ c strong cheese (Parmesan, goat cheese, feta, etc)</li><li>Additional herbs and spices</li></ul>								</div>

									<ol><li>Preheat oven to 350°</li><li>In a medium bowl, break the eggs and beat well. Add half the cheese, if using.</li><li>In a large ovenproof skillet (about 10 inches) over medium heat, heat 1 tbsp olive oil. Saute the vegetables (reserving any greens), salt, and pepper for 3 minutes. Add garlic and saute an additional 2 minutes. Add greens and saute until just wilted.</li><li>Increase heat to medium-high and mix in the remaining 1 tbsp of olive oil. Pour egg mixture over the vegetables, shaking the pan to evenly distribute. Cook without stirring until edges begin to set, about 5 minutes.</li><li>Top with cheese, if using, and move skillet to oven. Bake 25-30 minutes, until a knife inserted in center comes out clean. Broil 1 minute to brown the top. Serve hot or cold.</li></ol>								</div>
