Tastes of Texas Camp

Next week, we host our second week of summer camp in partnership with our brilliant neighbors at Creative Action. The theme will be Tastes of Texas.

Forty-five campers will get to experience all three of our main programs and make a seed-to-plate connection as they learn about where their food comes from.

With our Grow Local program, they will learn about bees, composting, and parts of the plant, in addition to having plenty of time to explore the teaching garden. The ribbon tree is especially popular. They’ll also sprout seeds in plastic gloves and keep track of which seeds sprout the fastest.

With our Farm Direct program, they will learn about seed saving, hear more about composting from Joe’s Organics, and meet some worms as part of a worm composting demo.

With our The Happy Kitchen/La Cocina Alegre® program, campers will prepare several different dishes that represent various food cultures that have shaped Texas cuisine. Our recipes will feature lots of produce from the farmers’ market, as well as the produce that campers harvest in the teaching garden. They will learn about different herbs, spices, and flavor combinations, and sample cucumber yogurt dip and the honey yogurt cream sauce below to get some ideas of sweet and savory flavor combinations. With that knowledge, they will move on to creating their own yogurt-based dip and leaving their own mark on the Tastes of Texas.

Honey Yogurt Cream Sauce

From Fresh, Seasonal Recipes from SFC’s The Happy Kitchen/La Cocina Alegre®

  • 1 cup plain or vanilla low-fat yogurt
  • 3 tablespoons 100% orange juice
  • 1 tablespoon warm honey

In a small bowl, combine orange juice and honey.

Add yogurt and mix well.

Serve over fresh seasonal fruit. Peaches and melons would be great choices this summer!
